Dissolve plankton in a liquid and fill a syringe to fill or simply inject a product to enhance its flavour.
BAKED CHERRY TOMATOES INJECTED WITH PLANKTON
PREPARATION TIME: 5 h 12
INGREDIENTS: cherry tomatoes, Olive oil, 2 g salt, 3 g icing sugar, For the filling: 30 ml mineral water, 5 g plankton, 0.1 g xanthan, 0.4 g salt
Scald the tomatoes in water and cool quickly in iced water. Peel the tomatoes, season them and add the sugar and oil. Mix and place them on a wire tray. Bake at 80 ºC for 5 hours. For the filling, whisk all the ingredients together. Once cooled, use the syringe to fill the tomatoes with the plankton mixture.
NOTES: In this case, we will have to make the plankton solution thinner so that the needle does not get blocked.
