Pickles are made by immersing a product in a liquid with acidic elements which can be flavored with herbs, spices, vegetables, fruits, etc. They can be either hot or cold. With the plankton we obtain a pickle with a more intense flavour of the sea and one which contains all its properties.
OYSTERS IN A LIGHT, WARM PICKLE
PREPARATION TIME: 40 min
INGREDIENTS:6 oysters, 30g leeks, Juice of ½ orange, Juice of ½ lemon, 1 sprig of dill, Grated lemon rind, 0.5g plankton, 2 spoons of olive oil
Poach the leek in the oil, add the lemon and orange juice and allow to boil. Remove from the heat and add the dill. Allow to cool and incorporate the plankton, mix. Open the oysters, remove the meat from the shell and place them in the pickle. Allow to rest for 20 minutes. Serve.
NOTES: Take care with the proportion of acid in the pickle so it does not overpower the plankton.
